Senbei are a kind of hard, fried cracker (you know the type) that makes a great salty snack, but only up in Aomori do we drop them into soup and eat them soft. The crackers are cooked to an al dente texture that is weirdly pleasant, and the broth is savory and sweet and complex. It’s hard to explain exactly why I liked this so much, but I ate it every day in Aomori, sometimes multiple times. I like new carb textures, I guess.
